Kugelis

Kugelis  a Lithuanian dish and tradition.  Mano Mamyte man sakydavo kad jinai Kugeli darydavo daug kartu kai ji gyveno ant savo ukio. Ir cia Amerikoij ji daug kartu Kugeli man padarydavo.  My mother, when she lived in Lithuania on her farm, used to make Kugelis many times. It was one of her favorite foods. It is easy and not complicated to bake. The ingredients are also simple. You do not have to go to the dictionary or the internet to find the meaning of them. My mother used to bake it, because when they were living  and working the farm, they grew the ingredients themselves.
The ingredients are   8 good sized potatoes,  4 eggs, 1 package of bacon, 1 good sized onion, 1 can of evaporated milk, 1 teaspoon of pepper.                                    You begin by chopping the bacon and onion into real fine pieces. They go into hot pan , and fry them until they are some brown and a bit golden. Grate the potatoes, squeeze out the water. When bacon and onion look good, put them in a big bowl with the grated and squeezed potatoes, the 4 eggs, milk, pepper. No salt, because the bacon has enough salt. The bacon fat goes into the bowl with the rest. Mix everything together real well. All then goes into a glass or metal rectangular baking dish. Preheat oven to 350 degrees. Baking dish then goes into oven for 1 hour and 20 minutes.  Out it comes, to be enjoyed. You could place some sour cream on it. Well this is how i make it. My mother used to put some secret ingredients into it, naturally hers was much better. I wish she could be here to make me Kugelis.  On the bottom picture, the pottery was made by my wife.
